Ingredients
1 cup cottage cheese (full-fat recommended)
1 large egg
1/4 cup grated Parmesan cheese
Instructions
1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or silicone mat.
2. In a medium bowl, combine cottage cheese, egg, and Parmesan cheese. Whisk until well combined and slightly smooth. Don’t overmix – a few cottage cheese lumps are fine.
3. Using a tablespoon, drop small portions of the mixture onto your prepared baking sheet. Leave about 2 inches between each portion as they’ll spread while baking.
4. Bake for 15-18 minutes, or until the edges are golden brown and the centers look set. Watch closely during the last 5 minutes to prevent burning.
5. Let cool on the baking sheet for 5 minutes. They’ll continue crisping up as they cool. Serve immediately or store in airtight container.
